Funny you should mention that. A couple of days ago I had an intensive session with a colleague working out a lot of stonework patterns. There was a hell of a lot of E,F9, double clickking anbd I wondered if there was an easier way.....

As far as the stone hatch. There are some great stone hatch patterns on Josh Higgin's website at http://www.hugginsfam.com/dd/. It works a lot better than the old stone symbols.
