The change command should work on existing dimensions, do the change command and pick the whole drawing by area.
That is if they are assoc dimensions.
If they are not assoc, then you would change text color and mask by text and select the drawing area.

I realize that this is an old post, but you might still be bumping into the problem. If you are using a TrueType font for your dimensions, then you've locked yourself into all of the quirks and liabilities that come with TrueType and a simple fix is probably not in the cards. You might consider using what I will suggest here to change the font first. Then go through the process to change the color.
I noticed that the suggestions started with the Change command. If that didn't work, then it suggests to me that you are using TrueType.
Here is the process.
F8: Dimensions
F1: Linear
S8: Change
F8: Text Style (Here is where you select either Font or Color. In this example we'll go with Color in the next step)
S8: Color
F2: Red
S0: Exit
F8: Area (Confirm that your layer search is "On", and change the appropriate areas)

Remember: Change the font to an SHX style font first and then change the color. Note that this works only for associative dimensions.

Good luck on future projects.

Hi Woody,

FWIW, I don't think I have ever had an issue using TTF's in general or used as associated dimension text. We use TTF's as plain text and inside MText all the time. We also get dimensions with TTF text from consultant's DWGs and those seem to work just as good as SHX function wise, albeit with a performance hit which can be decent if there is a lot of content onscreen.
