Is there a way to change an Mtext entity to just single text lines?

I was also hoping that we could change single line text to MTEXT.

You can use Extract 2D/3D from the Tools pulldown menu. MText/PText contains only 2D data, and thus make sure "Extract 2D" is ON. Extracted entities go into new layer.

I was hoping that this might be a CTRL-Right Click thing. Ah, well - I'll post it to the Wishlist!

I noticed that the new paragraph Ptext cannot be justified to the same line as standard text. Doing so would be helpful when aligning text in details.
