I noticed in the trial version there was a way to set the wheel on the mouse to zoom in and out.

Try holding down the Ctrl key while scrolling. This is the default behaviour in v11. There is a preference setting in full v11 that allows you to just use the scroll wheel. It is found on the Tools pulldown, program preferences, misc tab.
