Why does the text using typical text input different than when using MText? I have tried matching, changing, colors, etc. but when the text is plotted, the MText is not as dark... Looks bad when mixing text types close to each other...

They use a different system to create MText. You can play with the Fill and Outline settings and using different color combinations to get it close usually, but yeah it's kind of a hassle to get things to blend with existing text. I never got ours to match exactly.
