How do you turn off layers within a symbol without actually opening to edit the symbol? I know there is a way, I have just forgotten it.

1st make sure Symbol Layer Control is set on under the Insert Menu.
Then Ctrl-Right Click on a symbol, bottom Symbol Tools, select Symbol Layer Manager then turn on/off layers.

You can also hold and CTRL+DoubleClick on a symbol to bring up the Symbol Layer Control dialog as well, if Symbol Layer Control is turned on as Roger mentioned above.
